Ingredients:
1 LB Ground Turkey
½ Yellow Onion, diced
2 Cloves Garlic, minced
6 oz Tomato Paste
1 Large Zucchini, quartered or cut into half circles
2 Bell Peppers (any color), chopped
1 ½ Tbsp Olive Oil
1 cup Low Sodium Chicken Broth, or Water
Turkey Seasonings:
1 Tsp: Salt, black pepper, chili powder, oregano, onion powder, & paprika
Veggie Seasonings:
1 Tsp: Garlic powder, onion powder, oregano, & chili powder
½ Tsp: Paprika, salt & chili powder
Instructions:
Cook the Turkey: Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the ground turkey and season with the turkey seasoning blend. Break the meat into small pieces as it cooks. Cook until the turkey is mostly browned and nearly cooked through, about 5–9 minutes. Remove from the pan and set aside.
While the turkey cooks, prepare and chop your vegetables.
Cook the Veggies: In the same pan, add a small amount of additional oil if needed. Add the diced onion and minced garlic, and sauté for 3–5 minutes until softened and fragrant.
Add the zucchini and bell peppers, then sprinkle in the vegetable seasonings. Cook for 15–20 minutes, stirring occasionally, until the vegetables reach your desired level of tenderness.
Combine & Simmer: Return the cooked turkey to the pan with the vegetables. Add the tomato paste and 1 cup of chicken broth (or water). Stir well until everything is fully combined and evenly coated.
Cover with a lid and let simmer for about 5 minutes, allowing the flavors to meld together.
Serve: Serve warm with Garlic Bread

Double the recipe to serve a family of 4—you can still use just one 6 oz can of tomato paste when scaling up.
This dish is incredibly easy to make—even if you don’t have every seasoning on hand. Feel free to adjust and season to your taste; it’s very forgiving and always turns out well. Just keep in mind that ground turkey is naturally mild, so don’t be shy with the seasoning.
