Ingredients:
1 LB Ground Pork
Ground Pork Seasonings:
1 Tbsp Italian Seasoning
2 Tsp Chili Oil
1 Tsp Fennel Seeds, optional
½ Tsp Salt, Pepper, & Onion Powder
1 small Yellow Onion, diced
20 oz (2 packs) Tortellini
2 Cloves Garlic, minced
2 Tbsp Tomato Paste
2 Large Carrots, sliced
1 cup Heavy Cream
½ -1 bag Spinach
½ jar Sun Dried Tomatoes
2 cup Low Sodium Chicken Broth
½ cup Parmesan, shredded
½ cup Basil, chopped
Instructions:
Cook the Sausage: In a large Dutch oven, add chili oil and ground sausage and season with Italian seasoning, fennel seeds (optional), salt, and pepper. Cook until the sausage is fully browned and cooked through.
Build the Base: Add the minced garlic, onions, carrots, sun-dried tomatoes, tomato paste, chicken broth, and heavy cream. Stir to combine, scraping up any browned bits from the bottom of the pan to build flavor. Cover and bring the mixture to a gentle boil, then reduce heat and let it simmer briefly.
Cook the Tortellini: Add the tortellini, cover, and cook for 3–4 minutes, or until tender.
Finish the Dish: Reduce heat to medium-low and stir in spinach, Parmesan cheese, and basil. Mix until the spinach is wilted and everything is creamy and well combined.
Serve: Serve warm and top with extra basil and shredded Parmesan cheese.
Special Note
Add the Parmesan rind when you add the broth, then bring everything to a boil and let it simmer so the cheese flavor infuses into the sauce.
Substitute Chili Oil with Olive Oil and chili flakes.
