Trader Joe's Chili Lime Chicken Southwest Salad

Ingredients:
1 can Black Beans
1 can Corn
1 Jalapeño, diced
1/3 Red Onion, diced
2 Bell Peppers, diced
2 cups Cherry Tomatoes, halved
1/3 cup Cilantro, loosely chopped
1 LB Trader Joe’s Chili Lime Chicken, copped
Sauce:
1/4 cup Mayonnaise
Juice of 1 Lime
1 squeeze (or 1 Tsp) Agave
1 tsp Chipotle Chili Powder
1 tsp Smoked Paprika
Salt and Peper to taste
Instructions:
Dressing: Mix the dressing in a small bowl and set aside.
Assemble the Salad: In a large bowl, combine the chopped vegetables, chicken, cilantro, and rinsed beans.
Combine: Pour the dressing over the top and mix well until everything is evenly coated.
Serve: Serve and enjoy. Also serves well cold.
Special Note
Create an elote-style dressing by substituting the chipotle chili with Elote seasoning from Trader Joe's and optionally top the salad with Elote Corn Chip Dippers for added crunch.
Create a Chili Lime dressing by substituting the chipotle chili with Chili Lime Seasoning from Trader Joe’s.
Option to top with Cotija Cheese!
