Trader Joe's Chili Lime Chicken Southwest Salad

Ingredients:

  • 1 can Black Beans

  • 1 can Corn

  • 1 Jalapeño, diced

  • 1/3 Red Onion, diced

  • 2 Bell Peppers, diced

  • 2 cups Cherry Tomatoes, halved

  • 1/3 cup Cilantro, loosely chopped

  • 1 LB Trader Joe’s Chili Lime Chicken, copped

Sauce:

  • 1/4 cup Mayonnaise

  • Juice of 1 Lime

  • 1 squeeze (or 1 Tsp) Agave

  • 1 tsp Chipotle Chili Powder

  • 1 tsp Smoked Paprika

  • Salt and Peper to taste

Instructions:

  1. Dressing: Mix the dressing in a small bowl and set aside.

  2. Assemble the Salad: In a large bowl, combine the chopped vegetables, chicken, cilantro, and rinsed beans.

  3. Combine: Pour the dressing over the top and mix well until everything is evenly coated.

  4. Serve: Serve and enjoy. Also serves well cold.

Special Note

  • Create an elote-style dressing by substituting the chipotle chili with Elote seasoning from Trader Joe's and optionally top the salad with Elote Corn Chip Dippers for added crunch.

  • Create a Chili Lime dressing by substituting the chipotle chili with Chili Lime Seasoning from Trader Joe’s.

  • Option to top with Cotija Cheese!
